Weekly Meal Plan: July 9 – July 15

Sorry it’s been a while since one of these. Same old ‘excuses’ I guess, pregnancy is still kicking my butt energy wise, but everything else with it is going pretty well except for uncomfortable sleep and general aches and pains. I found a body pillow yesterday at Aldi for $10 so I’m hoping that will help a bit. I have my gestational diabetes test tomorrow, fingers crossed that I pass it.

The baby’s been moving a ton lately, which gets kind of uncomfortable at times but it hasn’t stopped being cool. I wish I had a window to see in there and see what he’s up to. I’m 28 weeks at the moment, a little less than three months to go!

Yesterday was super busy, I went to Aldi and then my mom and I got a call (she takes me to Aldi every week so I can push healthy food on her, plus I hate driving) that my aunt was in the neighborhood and wanted to have lunch. Then I stopped by Shaw’s on the way home for a few extra things. I didn’t get home until after 3 and then had to start dinner around 5. So this morning I was determined to be productive. Before writing this post, I did all the dishes, put away all the groceries I had left out from yesterday, and even put away all the clean laundry that had been sitting since Friday. Fingers crossed I can stay productive the rest of the day.

What we’re eating this week:

Taco Casserole (pictured) — I had to change up quite a bit because I didn’t have all of the ingredients I needed. First, I halved the recipe because I didn’t need two dishes of it though I may try freezing it in the future for when the baby comes. I skipped the zucchini because I hadn’t been to the store yet, and substituted frozen okra. I also traded the corn and the black beans for chickpeas because I’m not a fan of corn in dishes like this, and didn’t have any black beans. Still turned out good, though I should have added a full two tablespoons of taco seasoning or added some extra salt.

Creamy Sausage and Spinach Pasta — This is one of my go-to sausage recipes, the only thing I change is leaving out the jalapeno.

Honey Roasted Turmeric Chicken — I finally caved and bought some turmeric so I’ve been looking for plenty of recipes to use it in. This sounds delicious and I’m going to pair it with some mashed cauliflower and spinach.

Thai Black Pepper and Garlic Tofu — Tofu is always a go-to protein for me when I don’t know what to cook because it’s cheap. This recipe combines it with a ton of vegetables and makes a nice healthy dish.

Baked Pineapple Teriyaki Pork Chops — I don’t like pork chops, I just don’t. It might stem from the fact that I grew up eating my mom’s, pounded thin with some ‘meat tenderizer’ on them and possibly breaded. I can safely say mine are more appetizing, but there’s just something about a slab of meat with some sides that I don’t like. So I keep trying new recipes in hopes that it will make them more appetizing. I’ll probably serve these with some couscous or rice.
