Weekly Meal Plan — May 29 – June 4

I want to try getting back into meal planning posts, probably without the grocery haul pictures. If anyone is interested I might still post a list of what I bought for the week with a grocery budget.

I haven’t actually been meal planning too much for the past couple of months, I’ve just been so wiped out that doing anything beyond the bare minimum seemed out of the question. But I want to eat well for this baby, so back to meal planning it is. Here’s what we’re eating this week.

Sausage and Chickpeas (pictured) – I love easy one pan meals like this, and they’re so delicious. I’m always in the mood for a meal involving rice, sausage and chickpeas with loads of vegetables.

Parmesan and Sage Pork Chops – This is one of my go to ways to cook pork chops. I baked them for half an hour instead of cooking them on the stovetop, and served them with corn on the cob.

Enchilada Pasta – Another easy one pan meal with tons of flavor.

Shrimp with Orzo and Asparagus – If I’m cooking shrimp, there’s a good chance I’m using this recipe. I love the way the shrimp flavor blends with the lemon and asparagus.

Slow Cooker Asian Drumsticks – This is a new recipe for this week, I have a huge package of chicken drumsticks in the freezer I need to use. I’ll be serving it with a rice or couscous side with vegetables.

This book will be released on May 16, 2017. I received a copy through NetGalley.

Who hasn’t gone through their fridge and got depressed seeing all the produce they meant to use but forgot about? This book attempts to deal with all those food scraps you need to use up like that bag of wilted lettuce. It also shows you how to use things like squash skins and empty pea pods.

This is a great book for an adventurous cook who wants to use everything they can. Unfortunately for me, I just don’t buy and cook half of the foods in here. But take a look and maybe you’ll find inspiration for your next meal to use up those scraps in the fridge.

I’m making cake for our twin nephews again this year, and they’re into firetrucks this time. Last year it was Elmo. I’ll be making a sheet cake in the shape of a firetruck like the one below, and two dozen fire cupcakes.

I’ve been pretty bad with eating healthy so far in my pregnancy, though I try. I’m going to work this week on healthier snacks and lunches, and get a lot more fruits and vegetables in. This avocado toast with scrambled eggs looks delicious.

I keep looking for good quinoa recipes because I’m not the biggest fan of it, and this looks really easy and delicious.

Sorry the blog has been so quiet lately. I’m working on it but things have been a bit crazy around here. It’s been a mess of house renovations, baby stuff and my cousin is getting married this weekend so there was present buying, showers to attend and relatives coming into town before the actual event tomorrow.

But on to the news you clicked on this for:

Yesterday we went for our first (and only) ultrasound where the baby is perfectly on track for growth, everything seems normal and healthy, and the ultrasound tech told us with certainty if it’s a boy or a girl.
