Meal Plan — October 4

This is a day late, but so is my week. My husband’s birthday was Sunday, so he took off work on Monday, and my schedule was a bit thrown off.

Other than that, my life is pretty uneventful. We’re getting all ready for our vacation that’s starting in a couple of weeks. Loads of flying is in our future. I’ll be experimenting more with capsule wardrobes on our trip.

On with the meal plan!

OMG Chicken with baked potatoes – Some simple breaded chicken but juicy thanks to the layer of sour cream.

Cheesy Taco Skillet – Ground turkey with bell peppers and a small kick of spice. Still need to buy some spinach for this.

Smoked Sausage and Chickpeas – Monday night dinner, this was delicious as always. It’s such a hearty yet easy dinner.

Shrimp Scampi and Orzo with Basil – No link for this recipe as I’ve had it forever but never tried it. Basically you toss the shrimp with some ingredients and bake it for about ten minutes. The orzo is a really easy side dish I haven’t made in a while.
