Tasty Tuesday – Simply Great Chicken

This is my absolute favorite chicken dish. I’ve been getting sick of having just chicken for dinner (with sides of course), no matter how I cook it. This is one cooking method I never get tired of.

It’s ridiculously easy to cook with loads of hands-off time and delicious flavor. Plus, there are (kind of) only two ingredients!

Putting it together is simple. Simply measure out about half a cup of brown sugar, and mix in a packet of Italian dressing mix. If you’re like me and don’t like using mixes like that, mix your own together! Here’s the mix I use:

  • 2 Tbsp oregano
  • 1 Tbsp garlic powder
  • 1 Tbsp onion powder
  • 1 Tbsp white sugar
  • 1 Tbsp parsley
  • 1 tsp black pepper
  • 1 tsp basil
  • 1/4 tsp dried thyme
  • 1/4 tsp celery salt

You can also add some red pepper flakes for a little kick. This is so much healthier than the packets which include sugar as the first ingredient and also things such as sulfates, xanthan gum, maltodextrin and other “natural flavors”. Use about two tablespoons of your mix instead of a packet.

  
Mix the brown sugar with the spices then lay your chicken in a baking dish. Press the spice mixture into the chicken and sprinkle whatever is left over on top.

  
Then bake at 350 degrees for an hour. That’s it, the main course is done and you only have to worry about sides.

  
I served mine with Pesto Risotto, my very first risotto. My husband didn’t like it but I thought it was good, and it came out well for my first try. I’ll try a different flavor next time.
