I have an abbreviated menu this week because Christmas! My husband’s break doesn’t start until a half day on Christmas Eve, so I’m not entirely sure how much I’ll need to cook this week.
I really loved my food prep last week. It’s a huge help when there are a lot of fruits and vegetables to prepare for dinners and snacks. It definitely helped me snack effectively and eat better food.
I would like to make egg cups again this week, especially since I received a dozen farm fresh eggs from a family friend, but it stuck so terribly to my muffin pan that I need to figure out a better way to make them first.
On to the menu:
- Smoked Sausage and Potatoes – This is a delicious and easy dish that sounds perfect for a busy week.
- Green Pepper Casserole – More easy comfort food.
- Shrimp and Orzo – Didn’t end up making this last week because we had so many leftovers we needed to eat.
- Broccoli Chicken Dijon – The only new recipe, it might get bumped if I don’t need to cook.
Dinner ingredients came out to about $24.
