Menu Monday – December 21

I have an abbreviated menu this week because Christmas! My husband’s break doesn’t start until a half day on Christmas Eve, so I’m not entirely sure how much I’ll need to cook this week.

I really loved my food prep last week. It’s a huge help when there are a lot of fruits and vegetables to prepare for dinners and snacks. It definitely helped me snack effectively and eat better food.

I would like to make egg cups again this week, especially since I received a dozen farm fresh eggs from a family friend, but it stuck so terribly to my muffin pan that I need to figure out a better way to make them first.

On to the menu:

Dinner ingredients came out to about $24.
