Tasty Tuesday – Pasta with Chickpeas

Here’s a great dish for Meatless Monday, and it’s very easy to customize!


After putting the pasta on to cook, I sauteed some garlic and oregano before adding drained and rinsed chickpeas and some balsamic vinegar.


Drain the pasta (I used a garden blend), saving some pasta water, and toss it with the chickpeas, pasta water and some fresh spinach. It’s that easy. This is such a good-for-you meal with protein from the chickpeas and nutrients from the spinach and garden pasta. No heavy sauces or bad ingredients, just tasty.
