This is one of my husband’s favorite dishes, so I should make it more often. Cooking chicken on top of the stove intimidates me, so a baked version is easy and healthy.
In my case, the first step was to debone the chicken thighs. Then I sprayed each thigh with oil, and covered them in breadcrumbs. It’s more ‘chicken parm’ to mix the breadcrumbs with grated parmesan, I just didn’t have any. Bake for 20-25 minutes or so.
Simple, easy dinner that you can serve with any side, such as vegetables, rice, pasta or potatoes. Or, put it on bread to make a sandwich! That’s a great idea for leftover chicken pieces.
