It’s finally gingerbread season! I’ve had an obsession with gingerbread for as long as I can remember. Back in school, it might have been as far back as kindergarten, I made a felt Christmas ornament in school that my teacher scented with some gingerbread oil. One of my favorite parts of Christmas was bringing that ornament out and smelling it. I’m sure it’s lost its scent by now, but that is still one of my favorite smells ever.
In high school, I was on a mission to find a gingerbread candle, but apparently no one made it, not even Yankee Candle. Now I can find them everywhere and I’m so happy.
I’m a big fan of the Starbucks Gingerbread Latte though not of the price or the calorie count. But it’s the holiday season! I also found a gingerbread milk chocolate bar at the grocery store this week. How could I pass that up?
My menu for this week is a bit loose because my husband is off work until Thursday. This means we don’t need a lot of leftovers so I might not cook everything I planned.
- Scallop Stir Fry – Last week I made my sweet and sour stir fry with shrimp and we weren’t impressed. It masked the taste of the yummy shrimp too much. I thought I’d try it with scallops this week.
- Skillet Lasagna – Probably won’t be making this unless we go to Costco for ground turkey. There was an amazing sale on it in the grocery store flyer that I couldn’t find in store.
- Baked Chicken Parmesan – My husband loves Chicken Parm and I don’t make it enough. I have some leftover jarred marinara sauce to use on this.
- Cheesy Sausage and Rice – This was such a hit last time I made it that I want to make it again.
I did have a shrimp dish on the menu, but I didn’t end up getting shrimp to save some money.
