Happy Columbus Day!
Last night we had my parents over to watch the football game (my mom roots for the Cowboys, my husband is a diehard Patriots fan). We ordered a pizza and had a lovely time. Since my husband is off today, no dinner was needed for leftovers for work.
On to the menu:
- Baked Ravioli – Easy dinner, simply assemble and bake.
- Smoked Sausage, Tomatoes and Okra Skillet – I was going to make a different sausage dish but I found some okra in my freezer. Score!
- Green Pepper Casserole – Simple and delicious.
- Crispy and Tender Chicken Thighs with rice or potatoes.
I also made some turkey burgers from scratch on Saturday night. We just grabbed some ground turkey from Costco, and it ended up making six burger patties. Four went into the freezer to eat later. I wish I had made some french fries, I’ll make that a project for this week.
Dinner ingredients were only around $10 this week. I found a ton of great sales, we stocked up on a lot of stuff for only $65. Check back on Thursday for tips.
