Let the countdown begin! Thursday morning we’ll be up bright and early (though who are we kidding, we’re always up bright and early) on the way to the airport.
So, we have a super short meal plan for the week. I’m not too enthused about it.
- Scallops with Angel Hair – This one was leftover from last week and I made it Sunday night. I had some issues with my stove during it, but I think it turned out well. I definitely want to cook at least the sauce and pasta again, it had a great flavor.
- Teriyaki Chicken and Broccoli – Something nice and easy.
- Butternut Squash with Cumin Couscous – This is completely out of the box and probably way too much effort to be doing before we leave on a trip. But butternut squash was on sale and I keep trying to cook things I’ve never tried before.
The only thing I needed to buy for dinner at the store was the butternut squash, so I lucked out. It was only $0.69 per pound at 2 pounds, so it cost less than $2. I did go on Friday to a different store on my way home. They were having a great sale on chicken leg quarters, $0.89 per pound, so less than $5. So we spent less than $10 on dinners for this week.
