If you’re a vegetarian, a partial vegetarian, or you just like vegetable-based dishes, you should check out this book. Even if you’re none of the above, each recipe has a way to turn that meatless meal into something that will please even the mostly-carnivores you feed.
This book is a great way to step out of your comfort zone and try new foods. Most of the recipes are somewhat simple and recognizable, but introduce new food items and combinations you’d never think of, like Coconut and Cardamom Pancakes, which I made here.
It encourages you to think outside the ‘meat, potatoes, and a vegetable’ mentality and bring the vegetables to the forefront in the kitchen. Eating vegetarian even part time is shown to be better for your health and the environment. This book gives you an answer to any excuse you may have for not eating this way.
Personally, a lot of the recipes didn’t appeal to me, but I applaud the author for putting together such a diverse array of dishes, plus a handy guide in the back for making a meal plan out of them.
