Tasty Tuesday – Orzo Skillet

This dish came about when some dinner plan fell through, I was missing ingredients or something, and happened to have some ground turkey, diced tomatoes and orzo in the house. I searched for a recipe that would fit the bill and I found this. And it’s delicious.
Gather the main ingredients: ground chicken, diced tomatoes, orzo and homemade chicken stock.

 

Sprinkle a skillet with salt and brown the ground chicken.


Once it is browned, add tomatoes and chicken stock along with stuff like garlic and spices. Bring to a boil.
 

Add orzo and let simmer until most of the liquid is absorbed and the orzo is tender. Then add spinach and cheese. The recipe calls for frozen spinach but I can’t be bothered to thaw it and squeeze out all the water, when I can just add fresh spinach.
