Tasty Tuesday – Whole Wheat Spaghetti with Spinach and Chick Peas

Sorry this is the only picture I have of this meal, no step-by-step pictures.

I wanted to try something a little different, so I made this. I like spaghetti, I like chick peas and I love spinach. But usually dishes like this don’t turn out well for me, they’re usually really dry or runny.

This was really easy to make. First you put the water on to boil the noodles. While the spaghetti is cooking, start sauteing some onions and garlic in olive oil. I didn’t use onions, only garlic. When the garlic is fragrant and not burnt, add the can of drained and rinsed chick peas. I sprinkled on some onion powder at this point to get the flavor.

Season the chick peas with salt and pepper as they saute for five minutes. At this point, drain the spaghetti but keep some pasta water. Throw a few handfuls of spinach in with the chick peas then add the spaghetti and water. Turn off the stove.

Add some extra olive oil, more salt, some red pepper flakes and some cheese. I added just a tiny bit of shredded mozzarella.

This was delicious! The fiance liked it but it didn’t have any meat so he didn’t feel satisfied after, but it was just fine for me. This is perfect for a nice light dinner.

  1. it’s so nice to see healthy recipes which aren’t difficult to make and that look appetizing too. so many times people (myself included) have associated ‘healthy food’ with boring and bland veggies, steamed or something.
