One pot meals are the best. Two pot meals aren’t bad though. I especially love when these one or two pot meals include meat, veggies and grains all in one.
This dish only has three main ingredients: one pound of ground turkey, one bag of spinach and one cup of uncooked brown rice. Simple, lean and healthy.
I put on my rice to cook first and waited until it was almost done before cooking everything else.
Then I browned the turkey with a little bit of red pepper flakes then added some minced garlic. Then the spinach got wilted in (I used probably 3/4 of the bag). Then you stir in the cooked rice and top with cheese, about 1/4 a cup.
It was good but a tiny bit bland. I have a very light hand with my spices so I’ll probably kick it up a notch if I make it again.
