I gathered my ingredients: Chunks of pineapple in juice, one green pepper, one red pepper, 2 chicken breasts, and the assembled sauce. In the sauce: pineapple juice, chicken stock (I was out, used water, didn’t notice a difference), rice vinegar, soy sauce, brown sugar, corn starch, garlic, salt and pepper. I used the juice the pineapples came in for the sauce but I also have cans of just pineapple juice for when we have fresh pineapple.
First you put the rice on that you’re going to serve it with (I forgot that step first, whoops) then cook the chicken in oil. When the chicken is browning, add peppers. After two or three minutes, stir in sauce and wait until thickened. Then heat pineapples and serve on rice.
I’ve used tofu before in this and it’s just as delicious.
