This is a delicious and healthy way to serve shrimp, I always want to try new recipes but I keep going back to this one because it’s just that good.
While I peeled the shrimp, I put the rice on to cook. I used 1 1/2 cups of uncooked brown rice. Then I melted half of a stick of butter in my skillet (don’t sub anything else for butter, that’s what makes the flavor so amazing). Please ignore my dirty stove, it gets cleaned I promise.
I had spinach left over from last week and had to pick the good leaves out because they were so moist and wilty. I’m so bad about not using them fast enough. My peeled shrimp is in the bowl.
Season the shrimp with salt and pepper then saute in the butter. After about four minutes, add the spinach and let it wilt. Then turn the heat off, stir in rice then mix in some cheese. And you’re done. Easy right?
