Menu Monday – April 20

I’ve been so busy lately, it’s such a change from normal. On Saturday, the boyfriend and I went to Boston to the aquarium and also walked and walked and walked. Then on Sunday, we played some tennis in the morning. I am so sore, literally everything hurts. I’ve also had a lot of work to do, I’m still editing a novel and I’ve also been editing some short ebooks, but instead of editing, they basically require a total rewrite because the original author did not have the best grasp of English.

There’s not much on the menu this week as the boyfriend is getting his wisdom teeth out on Wednesday and won’t be able to eat solid food.

  • Shrimp, Kale and Wild Rice – This is one of my favorite shrimp dishes because it is so basic, has so few ingredients and is so delicious. I don’t follow the recipe exactly, I use plain brown rice and whatever greens that happen to be in my refrigerator.
  • One Pot Smoked Sausage and Pasta – Aren’t one pot meals the best? I love this one with turkey sausage and a gooey cheesy sauce. The only problem with this is that I forgot to buy diced tomatoes, so I might have to improvise.
  • Simply Great Chicken with Mashed Potatoes – I’m not the biggest fan of dishes that feature chicken or pork chops by themselves with a side. But this is my favorite way to cook chicken, it’s so flavorful and moist. I like to make the Italian dressing mix myself because who needs to buy a bunch of spices you already own premixed?
